Overview

The Culinary Arts Program at Lanier College and Career Academy prepares high school students to become professional chefs, attend post-secondary culinary schools, or other related cooking services in restaurants and other commercial food establishments. The course schedule includes basic and advanced techniques in culinary skills, including kitchen management and supervision skills. We also integrate customer service, baking and pastry, POS system training, ServSafe certifications, and much more!

Expectations

Program Expectations

  • Standing and working for 1.5 hours a day
  • Uniform worn daily (including days where there’s no cooking)
  • Willing to work with, touch, and smell a variety of ingredients (including raw meats, seafood, vegetables and fruits, etc.) 
  • Acting in a professional matter at all times
  • Displaying excellent customer service skills 
  • Willing to wash dishes
  • Willing to deep clean large cooking equipment 
  • Organizational skills 
Course Descriptions

Introduction to Culinary Arts 
Description: Introduces fundamental food preparation terms, concepts, and methods where laboratory practices parallel class work. Fundamental techniques, skills, and terminology are covered with an emphasis on basic kitchen and dining room safety, sanitation, equipment maintenance and operation procedures. Course also provides an overview of the professionalism in the industry and career opportunities leading to a career pathway in Culinary Arts. Course available only at Lanier College Career Academy (LCCA).

Culinary Arts I
Prerequisite: Introduction to Culinary Arts
Description: Building from techniques and skills learned in Introduction to Culinary Arts, this fundamentals course begins to involve in-depth knowledge and hands on skill master of Culinary Arts. Course available only at Lanier College Career Academy (LCCA).

Culinary Arts II
Prerequisite: Culinary Arts I
Description: Course build on techniques and skills learned in Culinary Arts I with strong importance given to refining hands on production of the classic fundamentals in the commercial kitchen. Course available only at Lanier College Career Academy (LCCA).

Culinary Practicum
Prerequisite: Completion of the Culinary Arts Pathway courses
Description: Introduces students to the culinary industry through hands-on rotations in business settings. Exposes students to general responsibilities needed for success in the culinary industry and continues to build on techniques and skills needed in the commercial kitchen. Course available only at Lanier College Career Academy (LCCA).

Student-Based Business

Bistro is a fine dining restaurant that’s open to the community. It highlights students in the advanced Culinary Arts program and the Hospitality Management program. The Bistro calendar is limited to certain dates to allow for an ample amount of classroom instruction. It’s open on Thursdays and Fridays several weeks during the school year.
